I spent hours toggling with running totals and hiding columns but I cannot seem to recreate this pivot from 2007 into the 2003 version. Help?

Please refrain from using terms such as "HELP" in your title - adds no value - given first post I will amended for you.
The question is not altogether clear ...
There is no "compact form" layout prior to XL2007 per se so you can not show Item "below" Supplier in XL2003 - Item would sit adjacent to Supplier in XL2003 aping "Tabular Form" in XL2007
(you can adjust the Layout of Supplier field in XL2003 and use "Outline" but it's still not quite the same thing as Compact Form in XL2007)
Other than the above you should find you can replicate the remainder of your XL2007 PT in XL2003.

Sorry, first time user please forgive me. I am fine with having the item adjacent to the supplier but am unable to have the two totals (Asserted and Recovered) at the bottom of the columns as 2003 likes the 1 grand total function. When I drag the asserted and recovered (while also having them in row fields) into the Data field in 2003 , they are stacked on top of each other, which is not what I want. I simply want totals for both these columns displayed at the bottom, underneath their respective column
Once you've added both Asserted and Recovered to the Pivot drag "Data" row field to the Horizontal Axis such that they become Column Fields - at which point the Totals will display left to right rather than top to bottom.
