My source data only includes weekdays, but when I plot a line chart, my X
axis puts in weekends, too. How can I skip weekends and only display data
for weekdays?

To change the setting from a time-scale:
Select the chart
Choose Chart>Options
Select the Axes tab
For Category (X) axis, choose Category, click OK

Are you sure you have a line chart and not an XY plot?
