I'm trying to teach my boss Excel, and she somehow comes up with scenarios I've never encountered.
She likes seeing everything all the time, so all of the cells are expanded big enough to show all the data.
There's one row that has lots of data in it, and the data seems to have exceeded the maximum allowed height for cells. The consequence is that the print-out doesn't have all the data (it prints how it's displayed on the screen). How can I get the complete data in each cell to print regardless of how big each cell is?

You can't; Excel has limits (like anything else) including for column widths, row heights, characters in a cell, displayable characters in a cell, .... See Help for Excel specifications and limits

lol, she's a HUGE Word fan. I deal with Internet stuff, so I like Excel to keep all my info nice and tidy. She loves making charts in Word, but then I have to move it all over to Excel, so I thought, why not start her in Excel?
Additionally, I don't really ever print any of my Excel stuff, but she likes having physical copies.
It's just two different brain patterns, I guess. I suppose I'll have to tell her to go back to Word.
