Outgoing Mail Rule Cannot Be Overwritten

I have a rule set into my Outlook 2010 that delays every email I send out by 5 mins as shown below

But when I try to overwrite the rule at this screen for any specific email, the new rule does not register and the email follows the 5 min delay

is there anything I can do? I want the standing rule of a delay by 5 mins to still stand at all times but the flexibility to change it as and when needed

Perhaps try adding an exception to the rule?
    Something like this maybe:
Apply this rule after I send the message
    defer delivery by 5 minutes
except if assigned to DelayOff category
You'd have to create the category first, of course, and apply the category before sending.

I recently started a new job so am a bit busy and may not reply quickly. Sorry - it's not personal - I will reply eventually.
If your problem is solved, please go to 'Thread Tools' above your first post and 'Mark this Thread as Solved'.
If you use commas as your decimal separator (1,23 instead of 1.23) then please replace commas with semi-colons in your formulae.
You don't need to give me rep if I helped, but a thank-you is nice.
