I need help convincing my boss that thier is a business need for these classes. I would prefer to take the first one that costs $695 over the second one that costs $250, so if anyone could give some good reasons why the first is better that would great!

Looks to me like knowledge of the first is a prerequisite to taking the second.
On the one hand, training is the gift that keeps on giving. The company can recoup the cost of the training and your absence in just a few weeks, if you start effectively applying what you learned.
On the other hand, this is a ton of material to cover in two days and one day respectively. I would try to get some word-of-mouth feedback from people who have taken the class, compare your current level to theirs before they took the class, and get their impression of the value. The worst thing that could happen is being one hour into the class and realizing that you're unlikely to learn much, either because you already understand the material, or it's totally above your head, or the instructor is lousy, or the class is too large, or ...
If you are persuaded that it's the perfect class, take two days off and pay for it yourself. It's tax-deductible, and a good investment in your own future. Then look for a new job.

I find it weird that pivot tables have just been thrown into the first course.
And if you can charge people $700 for teaching that, I'm in the wrong job...
More on point - why would this benefit your employer? If you can think of concrete ways in which this would help you to help them, it will be much easier to sell it to your boss (unless he's like my old boss who believed that if he trained me it would just make it easier for me to find other employment!)
If you can demonstrate ways in which you will be able to streamline processes and speed up workflow, thereby saving them money overall, you're halfway there.
