we are running access 2010 and in one of the forms two of the fields only allows 20 characters, how do I increase this to 30 characters,

Open the underlying (bound) table in design view and set the length of the field to what ever length you need. The maximum is 255.

I'm new to access (really new), I'm in design view, but how do I open the 'underlying (bound) table',

If you are in design view for the table then you are there. Scroll down to the properties and change the size of the field. If you are in design view for the form, then close the form and open the table in design view. Go to the Navigation pane and find your table that is bound to the form.
