Applying criteria to pivot tables

I have a worksheet containing data, the fields include a list of categories, say dog, cat, rabbit; and for each of the records listed their age is stored in a field.

Can I produce a pivot table showing the number of dogs with an age greater than X?

I don't see a Pivot Table really being needed with data that are not too complex in their structure. Does this work?

But if you realldo want a Pivot Table (perhaps your dataset is much more complicated) then look a few rows further down in the attachment.

Thanks for this. Yes my data is much more complicated 30K rows and 100 'species'. I've 'twisted' your solution to fit my purposes. Can you tell me how you created the 'species' filter please.
