Pivot table issues

Hi all,

How can I create a pivot table for the names in the rows in the table not to run alphabetically. I run this report every week and I want to derive the pivot table to show the same format in the row as the report but not as alphabetically shown on the table. I have attached a spreadsheet and the respective pivot table to show my issue. Also, how do I arrange the columns in the table the way I want?
