Let's say I have chart to show data from the range $D$5:$D$10.
Now I update my dataset so I have data in D11 as well. I want my chart to update with the new data.
How do I choose to have chart range that goes from D5 and down for as long as my dataset goes. I want to stop when I have a blank cell.

There are two ways to do this.
Convert the data range to an Excel Table and rebuild the chart using the table. As you add or delete rows of data, the chart range will adjust automatically. If you add a new column to the chart, you will add a new series to the chart.
The other way is to use named dynamic ranges. See these two articles. The first explains how to create a named dynamic range and the second explains how to use them in charts.
