Pivot Table Sort

I have a PivotTable. I have a field, Condition, that sorts Excellent Fair Good Poor.
I want it to sort Excellent Good Fair Poor.
When I bring up help for Sort Date in Custom Lists, my scroll bar on the right will not move so that I can see the instructions.

Can someone paste the instructions here? Or, tell me how to do it. Thank you.

You are welcome and happy to help in some small way. I could've maybe done better, but I'm using 2007 and not sure where stuff is on 2016.

Pivot Charts and Slicers? Yes I do, but again, don't have that on my computer here as it's not a 2007 feature.
