Generally speaking, Excel pivot charts struggle maintaining formatting when you make changes to the pivot table (filtering...sorting...etc). I think many users would say it's a crap-shoot, sometimes the formatting is maintained, other times it is not.
For my experience, I have had some success when I apply the following methodology/follow these steps rigorously:
1. Create the Pivot table and chart (do not create slicers yet)
2. Make all formatting changes now - color, number formatting...etc
3. Now create your slicers/add filters...etc
For me, this has worked almost every time. Logically, it would seem that Excel has some sort of caching action that captures your formatting options and applies to all filtered/sorted groups, but this action doesn't seem to hold if you have already filtered/sorted before you add the formatting. Doesn't make a lot of sense to me but again, in my experience, this is how I have found success.
