XY Scatter with dynamic dates

Hi all, first post here, hopefully some experts can figure this out for me.

I'll try to explain this clearly. I have some XY data (temperature and depth) that I need to plot in an XY plot and be dynamically updated when I filter the corresponding worksheet by day, month or year. The Y values (depths) remain constant, but need them displayed on the Y axis. The scatterplot is to display temperature increase over time with all of the depth points being connected. My problem is that Excel can only plot 255 series, I currently have 1038 days worth of data to plot, although likely max 50 will be shown at any given time. Secondly, I don't want to enter all of the series manually.

I've attached an image of what it needs to look like with only three days of data:
