Is this something that cannot be accomplished through Power Query or did I not provide enough information?

Consider taking the time to add to the reputation of everybody that has taken the time to respond to your query.
Testing with the regular Find & Replace feature ñ (Alt 164) can be replaced with n.
The link is to an article, with a video, on bulk finding and replacing with power query. I am assuming that it would have the same functionality as the regular Find & Replace, so that you would be able to replace all of your special characters.
Notice that I have not tested the method using power query.
