Columns to dropdown selection, but keeping graph info

To save on the horizontal footprint of my spreadsheet, I'd like to move the first 11 of the 14 'Category' columns into a single column and select with a dropdown. I can do this myself, easily. The problem is that each column totals its numbers at the top and also into a bar graph at the top of the document. How can I keep this data showing in those locations while moving it into a space saving and view friendly drop down list? Sample doc attached.
