Filter and chart table w/ filter for end user

Hitting a wall... bit inexperienced with creating tables and charts. What I have here is a table with data for a variety of stores, that stores sales by category for each week of the year. Problem is, I need this data to present itself in a pie chart format indicating percentage for each category based on a filter by the user who selects what store(s) and week(s).
My challenge seems to be implementing a pivot table type solution when I need to filter by all 3 options and those options are both columns under a header but also by the row of headers themselves.

I've found a work around within Power Query to translate the date in the table to a pivot ready table that allowed for pivot tables and charts to pick up the info on a "refresh" and still enable the filtering necessary in the charts and maintain the original data table format for importing of data.
