I've a workbook loaded up that contains Rejection Reasons and the respective percentages of the total. I need excel to dynamically graph the top 10 percentages.

Simplest way is to use Autofilter, Top 10.
Or you will need formula, LARGE/MATCH/INDEX, to construct a table of 10 items.
Or use a pivot table/chart

If i use the Autofilter would it be possible to name the range from say cell C2 to C11 and call these 10 figures "Graph". Then when i sort the range will the figues that fall into this named range automatically update on the graph?
Not with autofilter.
If you sort the data then yes.
If you put this formula in J1 and copy across the range J1:L11
=A1
You can then chart the relevant data from J1:L11
The Sort A1:C46 on column C Descending to get Top 10 %'s
