I want to hide certain values from my two vertical axes:
Primary axis should not show values <0
Secondary axis should not show values >120
Please could somebody tell me how to express this in terms of a custom number format?

You can edit the horizontal and vertical values.
Click on the graph
Chart Tools>Layout>Format Selection
Click on the axis values you want to change
Set Minimun to Fixed and type 0
Set Maximun to Fixed and type 120
You can also change the units
Sorry, that's not quite what I'm after I'm afraid. Let me rephrase it:
I have a primary y axis, with values from -100 to 100 and a secondary y axis, with values from 0 to 240. I want to display all of each axis, but I only want the values to appear for half of each axis (the top half of primary y and the bottom half of secondary y).
This can be done by using a custom number format, but I don't understand how to create these to achieve my aim.

I don't have Excel at home, so I can't test it, but I would expect a two section number format like 0;" " would show numbers >=0 and display a space for numbers <0

Your example looks somewhat like the panel chart discussed here http://peltiertech.com/WordPress/bro...n-excel-chart/ You might look at how he did the axis labels (If I understood him correctly, it was similar to the number format suggested earlier).
There's an excelent tutorial on custom number formats in charts at this site. Nice example file to download as well...
