Pivot table to find number of items moved given in an amount of time

I have been trying to figure out how to get the amount of time it takes to unload a number of items off of a shelf and put on a different one. This would have to separated out by certain users and each time a item is touched it has a time stamp on it. The common thread is the shelf they are moved from. See example for a better idea.
