Simple tracking Pivot

Hi, I just want to create a simple pivot table for tracking of delivery of items and they can all be different items. so I want to track a summary of each type item but also track where from and where to its sent. i.e a simple shipping tracking . Pivot.from- to - item1/item9 -buyer -seller . any suggestions how I start on this?
