Today date after checked box & increase #

Hello!

I am doing close outs, and I have set the check boxes for each line. I would like to have the today date to appear after clicking the check box on the next right cell. Do I have to use IF for this one?

ALSO I want the number to count up after click the check box. For example:

Name:
Bob (assigned)- 5
(completed)- 4

Every number of completed line increases every time each box is clicked. How can I do that?

I hope you understand what I am trying to say. This would be a huge helpful if you could answer to my two questions.
