Sumproduct conditional array w/ 2 conditions linked by a 3rd variable, in multiple sets

I'm trying to solve the following problem using a conditional array.

Variables: Food Item, Table #, Person.

If each person (John, Beth, ...n) contributes a percentage of their food basket (Eggs, Apples, ...n) to each of three tables (Table A, B, ...n), how many of each food item is left at a given table?

The challenge is that each of these variables change each month, and I want an array to calculate the results every month because the number of people is large and will increase every month.

I created the color coded image below to illustrate. I'm a newbie, so sorry if I'm posting the question inefficiently. Thanks in advance for the help

You need to reorganise your data if you want SUMPRODUCT or similar to work as the current layout is unworkable.

For each table (TABLE A etc) you need people and associated % by month. You need a similar table(s) for the products (by people and months).
