I want to change the word "City" so that it equals the cell next to it. I.e.
A1 A2 A3
I love to drive in "City" "Sydney" What is the formula I need to use to Change the word "city" to equal A2?
I love to drive in "City" "Melbourne" Eg: I love to drive in "Melbourne"
I love to drive in "City" "New York"
I love to drive in "City" "London"
I love to drive in "City" "Milan"
I love to drive in "City" "Los Angeles"

If you already have date in the cell, you cannot then add a formula to it, without losing that data.
Your copy/paste in your post did not come out that clear, and Im not sure I fully understand what you have and what you want
Can you upload a small (clean) sample workbook (not a pic) of what you are working with, and what your expected outcome would look like.

Not sure if I understand correctly but try this in A3 to change the word city with the word you have in A2
=substitute(A1,"City",A2)

maybe:
A1: =IF(A2="","I love to drive in ""City""","I love to drive "&A2) and drag to the right as far as you need
A2 (B2, C2...): blank or name of city, e.g. Sydney, Paris, etc.
