Remove selection and return next value

Hi there,

I have a data validation list of 8 options.

I then have 8 items where each option will be matched with.

Is there a way that when the first item is matched with an option, it is then removed from the remaining available options in the list for the next 7 items? I want all 8 linked to the one set of data validation with a formula to remove the item from the list if it is matched with an item.

I'm not sure exactly how to explain it. I've tried my best to do a mock-up. Hopefully it will make sense.
