adding formula [on timesheet to show overtime hours]

Looking to add a couple of formulas to allow me to monitor overtime I have added comments onto the first sheet but I'm more than willing to try and explain further to anyone who can help out, I don't want to post a load of text and not get what I'm trying to do across.
