What does COUNTIF look at in a cell? Is it the underlying data, or is it what is actually displayed (due to formatting)? In the attached, I expect A12 to show 2, since there are two cells which say "Thu" There are actually 4 cells which contain a date which is a Thursday. How do I get this to count the two cells with Thu, and not the two other cells which happen to have Thursday dates?

Excel will always count 4 as the underlying data is a date (number) and the "Thu" is simply a formatting option.
Why do you want to do this anyway?
One way:Formula:
=SUMPRODUCT(--(IFERROR(WEEKDAY($A$2:$A$9,2),0)=4))
