Hyperlink with ampersand in text string name

I have a hyperlink that references cells in my spreadsheet and then creates an email with the TO: CC: and Subject: lines populated. The issue is that one referenced cell for the subject line may have an ampersand in the name in the text string and the hyperlink will not populate the any part of the name after the ampersand. How can I get Excel to print the exact name with the ampersand?

EXAMPLE: Cell O1 contains text "Dental/Basic Life/Basic AD&D/Vol Life/Vol AD&D/STD/Vol STD/Vol LTD", the output is "Dental/Basic Life/Basic AD" so everything after the & does not print.
