I have a Pivot Table that looks something like this:

It is showing the Top 5 Items, but is there a way to get it to show the total for all the items, rather than just the total for the top 5?

Your best bet is to group all of the other items on another level, and then hide details, you can then choose to show those as OTHER and include them in the total.
If your source for this data is a database, there are some more creative ways to do this with left joins to automatically group all other products.
