Perhaps
=IF(A1<=100,A1*40,((A1-100)*0.2)+A1)

Given a value x indicating a quantity of apples
The amount over 100 would be (x-100)
So
IF(x < = 100, x*40.00, 40*100+(x-100)*0.02)
Postscript: Apples are £40 each??????? Blimey, remind me not to go to your greengrocers! :-)

Ensure you describe your problem clearly, I have little time available to solve these problems and do not appreciate numerous changes to them.
Not working as it should be £40.00 however many under 100.
Cheers
Do you mean?
=IF(A1<=100,40,((A1-100)*0.2)+A1)
