Formula to calculate late arrivals...

I have a spreadsheet of late deliveries. There are several delivery due times.
I need to have a formula the shows in Hours and Minutes how long after the due time the delivery was made.
However the following applys

there are 2 different working hours
07:00 - 08:00
08:00 - 18:00
Some items are for a Mon - Fri Delivery, some are Collect Saturday - Deliver Monday, some are Collect Friday, Deliver Saturday.

I have attached the spreadsheet im working on
AH - Due date/time
AI - delivery date/time
AJ - How long it was late
AK - Service (TS, S, SN, SA are all Saturday deliveries, any others are Mon - Fri)

not sure to have undestood: an attempt

If you customize cell format of AJ22 as

[h].mm

in AJ22 the formula

=MAX(0,AI22-AH22)

should calculate the delay.
