How can I set 1 pt line width and .75 pt width markers as a default for all series in chart?

You can't do that, but, you can do save a chart template of your own, and when you create a new chart, you select your template! Tell me if it fits your needs.

I think I'm probably going to need to write a code to achieve what I need.

As suggested you could save a template.
You will however need to create a template with enough series formatted with desired line weights otherwise new series will be formatted as standard.
