Give value to specific string

Hello have a workbook attached - looking to be able to track vacations for each person.

Would like to be able to count each time a specific contributer has used the string ie "vacation" give it a value for each month pull the data from "Forms output" page. Then list the number of times each person has used the srting "vacation" for each month in the owners month on a sheet called "vacation tracker" thereby being able to tell how many time a specific owner has used the the string "Vacation" each month for the whole year.
