Can someone please give me a formula that will highlight cells that have passed an expiry date?

I think it might be done using conditional formatting but not sure.

You need three rules set up and applied as I have done for you in the attached:
=TODAY()-B3>=30
=TODAY()-B3>=120
=TODAY()-B3>=365
Select just cell B3 when setting up the rules and use the Applies To ... field to set the range.

Textbook case. It can be done with "cells that contain" and specifiying "less than" and =TODAY()
It could also be done with "use a formula"
=B3<TODAY()
