Countif multiple column conditions

Because of a very complex model I'll simplify the precise need in the following example.
I need to count entries on multiple conditions.
I appreciate that i could add multiple countif conditions, but for the full data set, this is not practical. Also being restricted to nominating the row numbers is not ideal (ie not being able to leave the entire column referenced "C:C" fashion)

Is there a more elegant way to achieve this?

Does the answer lie in the Sumproduct function

this stripped down example, how can i count the weekend shifts of each staff member by member and day. Ideally I need to add two more criteria permutation options (eg Staff member, Sat/Sun, Overtime Y/N, Shift A B or C)
