Question Use template with selective date with default values 0

I want to maintain caffe bar inventory every day.
One simple solution is to create template, fill data every day, and have hundreds of files.

What I want to, is create table in from:

    ITEM | NUMBER_OF_ITEM

    item1 | value1
    item2 | value2
    item3 | value 3

I've tried using pivot table, and filter/group by date, but than I have 40 * number_of_dates columns which I
need to update to be visible in pivot table(can not change data directly in pivot table, where it is actually grouped).

    Thank you!

creating a workbook of your input data and what the data should look like as far as out put will help with your request.
