how do i get the pivot table to take text from sources instead of having them all as values?

Only the row and column fields may be text. The data fields must be values in a Pivot Table.

I believe that is what you are referring to - and it is merely how Pivot Tables work. If you are trying to put text fields in the data section, then try moving them to the row section instead.
