Can't -- that's not how Excel works. Insert a row above your data and a column to the left, and use those cells to contain row and column header values.

you can't really as excel needs row/columns to reference.
but you can hide column/row by going to tool/options/view and uncheck row&column headers.
now bear in mind anything entered in the first cell after you have put your own labels in will really be cell B2
