Excel 2007 : Exel Templates

In 2003 I used templates a great deal.
In 2007:
I cannot find a way to open old Templates, except by going to the folder that holds the templates.
When I do open an old template, modify and hit save, it does not act like a template in that it just saves the information. It does not give me the option to save as something else.
I have been able to figure most everything else out in 2007, but this eludes me.
Indeed, even doing a simple Save as, seems non-existent.
