I believe starting with Excel 2k it is a many as your system memory can handle
Do a search in the Help for "spreadsheet limits" to see all sorts of limits
For the number of worksheets:

255 is the maximum number of sheets that can be set in the Tools menu > options > Grneral Tab for when a new workbook is created by using the File Munu > New option.
You can add more than 255 sheets using the Insert Menu > Worksheets

I'd think carefully about workbook design before adding a lot of worksheets.
A good rationale for having mutiple sheets is that the sheets contain entirely different types of data.
A bad rationale is that they constain the same type of data for different days, months, people, ....
How do you ensure you can see all tabs if you have a lot of sheets?
