Stop automatically adding data to pivot table

I have a data tab and then multiple tabs that run pivots off that data. I do have it set up as a dynamic range so all of the new data automatically gets added to pivot source once I hit refresh.

Here's the issue, on several of my pivots I filter out all of the projects I'm not looking for and just report on the projects I'm interested in looking at. By doing it this way if we create a new project it automatically gets added to the bottom of the pivot. I know, I can simply filter out these new projects but we have hundreds of projects and new projects are being created all the time.

Is there a way to stop new rows from automatically being added to a pivot?

The only way it would get added is if you refresh the pivot table correct?

Right, we're in the project management area and we get a dump of data out of a database. So that's what's going into my data tab. Out of there I'm looking at our entire portfolio and also looking at specific projects. So I need the data to refresh in order to see any changes to either the project or portfolio but when looking at the specific projects I just want to see that project and not new projects that have been created.
