Use Replace All. Replace " Total" with nothing (leave the replace with cell blank).

If you always have a value, followed by a space, followed by the word total, then do this:
Highlight all of the cells you want to fix, go to Data, Text to Columns. (It's under data in Excel 2010, not sure if it's same in your version)
Choose Delimited, then click Next. Under Delimiters, check the box next to Space, then click Finished.
Now you will have two columns, one with your values, and one with the word Total, which you can just delete.
