Connecting Text from a List to Numbers in a Formula

This is a pretty complex issue (in my opinion at least), and my skills are fairly amateur, so I'm not sure how easy this will be to explain.
I'm trying to come up with an overall "complexity score" based on about 10 different data categories. These categories need to be weighted differently, and none of them are numbers; they are text entires from drop down boxes. The texts, however, can be ranked (for example, a low risk selection would be associated with a 1, high risk with a 3).
I need to be able to somehow define all of those numbers associated with the texts and then find a way to weight the averages, then come up with an overall formula to calculate the score. Let me know if you have any ideas!
