Archiving Data for trned analysis

Good Evening All,

I have created a basic form for a quality check on various fruit and veg. I would like to be able to press a button that would archive the data into a table that I can run pivots on. I can write a macro that copies and pastes the data into another page, but im looking for something slightly more advanced that would archive each submission based on the date, and im also struggling to find a way not to paste over the last entry, by which I mean how do I make it paste in to the next line down of the archive tab?
