Question unlocking some cells on a protected sheet

Hi, Just bought Excel 2011 for Mac. Although familiar with earlier versions
where Format Cells was used to unlock certain cells on a sheet I can't find
a way of unlocking cells that allow others to enter data but not change the
layout and formulas that have been entered.

Also an effective manual/textbook recommendation would be welcome.

    Thanks

    Frank
