Trying to hide data without changing the total

I'd really appreciate some thoughts on how to hide information that I don't find useful without taking it away from the total. I have excel 2010 and in my pivot table I click to deselect an item that I find uninteresting. I don't want that info to disappear, only hide it. But excel takes it away from the total percentage. How do I get around this?

One way is to set the font colour to be the same as the fill colour and hence the data becomes invisible but still there.
