You can use a macro to do this. This is a pretty rough and ready example but can be refined easily enough. Run the macro "test" on opening Excel, and for the rest of that session any cell containing a value will increment by 1 when the up arrow button is pressed. Be aware, that this will overwrite formulae without warning.

steve - yes, I want to be able to do this simply in one cell at a time (selct the single cell with my mouse, then press the up arrow key to increase the value by 1).

I can't seem to get that macro to work. This is the first time I've ever tried creating and running a macro, so I am guessing that there is something I'm doing wrong. Following what Excel's help says, I enabled all macros (and macros are working--I successfully used a different one). I opened up Visual Basic, opened up the Code window for the Module in Sheet 1 (the sheet on which I wish to use this macro), and pasted the code you gave me. At that point I closed Visual Basic and returned to my spreadsheet to test the macro. The up arrow key still just moved my selection to the cell above.
I then tried saving my spreadsheet as a Macro Enabled Workbook (*.xlsm), but the macro still didn't work. Do I need to save the macro somehow in Visual Basic? I tried pressing Ctrl+S before going back to my spreadsheet, but still nothing changed.
I've uploaded a screenshot of what I did in Visual Basic in case this helps:

The issue is that you haven't yet run the "test" macro. You need to run it in order for it to work. You can do this by keying ALT + F8, then selecting the "test" macro, and clicking Run.
