How to keep a date from changing until a specific time?

    Hello
First I want to say thank you for any help you can provide.
I have a report that our night shift fills out and we do not want the date to change until the following day at 8am.
I am using =TODAY() but instead of the date changing at midnight, I need it to stay the same from 8:01am to 7:59am the next day.
How do I set this up?
    Thanks
