I've tried a countif + index amalgamation but I'm struggling unless the data is sorted by category, but I want it done without any sorting.

I believe that the easiest way-without array formulas and not even drag down is an advanced filter. You can do this using the option in control panel or recording a macro like i did!

There are two supportive column Column A to create Category list and column B to create Invoice list.
Used sumproduct to calculate the totals
