Well, instead of seeing a looooong list with repeating values in several columns, a pivot table will quickly summarize the data by any column, calculate average, sum, count, percentage, min/max, top ten, etc. Another few clicks and the data can be presented in a chart. Group data by year, quarter, month, slice and dice.
If you know how to create them, I wonder how you fail to see their benefits.
