If you deleted the sheets and saved the file, they are gone. Restore from a backup.

Open the directory where you stored the backup and copy it into the directory of the broken file.

If you don't have any other copy or backup, you can recover any file using http://www.recovermyfiles.com/ especially if the sheet is really very important for you. You can even recover it by a certain date or period. Like for example you accidentally deleted it today, you can recover your copy last week.
