Text and Today() function not returning date in right format (Google sheets)

Hi guys....

I have been messing with the date format on my google sheets to no avail. Which makes me think is it even possible to have text and a date displayed correctlly..

="Last Updated: " & TODAY()

That is the function and here is my sheet..
